The goal has been to assist people in the industrialized world understand and appreciate tropical products we’ve had available for a long time but don’t know the story behind them. Vanilla is one of the most esteemed spices in the world — and vanilla extract, the spice in its liquid form, is no different. Although they don’t indicate how much sugar is in the extract, being the second ingredient indicates that it has a fair amount of sugar. That's because the Melopina bees that pollinate vanilla orchids and initiate the growth of the vanilla bean pods only exist in Mexico. It upsets me to know that their labels do not have to be honest and true, that I really canNOT know what is in that bottle! Now, compared with imitation vanilla, it has some redeeming qualities as it does contain pure vanilla.Note: If using pure varieties of Mexican vanilla extract, a small amount goes a long way too – one tablespoon of extract or vanilla bean paste is equivalent to one vanilla bean. In contrast to bourbon vanilla, the Mexican vanilla variety does not exude strong sweet notes, but stays in the background with its tart, heavy, woody aroma and leaves a small, yet cheeky floral bouquet at the end. Mexican vanilla beans are still grown and cured using traditional methods unlike in other countries like Indonesia and Madagascar.
